The farm Salos, the result of collecting inheritance with love and awareness from the hands of previous generations of farmers, has about thirteen hectares of fields, located in the Frassanito, a few kilometers of the beautiful city of Otranto, in Puglia, where the sea meets the countryside, where the warmth of the sun marries the scent of the maquis and where the wind twirls the olive branches. The production currently includes three varieties of cereals, different varieties of vegetables and fruits, legumes of ancient tradition and, finally, the olive oil, made from trees about five decades. Cultivation broadly follows the principles of organic farming and biodynamic, and is oriented to privilege quality over quantity, as well as recovery of verietà of vegetables local lost, like wheat Senatore Cappelli, a cereal high quality which yields excellent flour for baked goods. The transformation of the classic frize, taralli, tomato paste, pasta and any other product, made from plants selected for their professionalism and quality of work processes, is deeply concerned to respect for tradition and the greater conservation of taste and properties nutritional raw materials, ensuring that products are as much as possible "to be".
